Playing on Grand Master difficulty and finding the combat serviceable if not a bit wonky. But then I went to Dathomir. Focus on Trilla first, and parrying the droid’s shots second. When you’ve blocked a barrage of shots, use Force pull to draw the droid in and then fire it at Trilla for a tidy bit of damage

The nice thing about difficulty in Star Wars Jedi: Fallen Order is that it is transparently explained in the menu. Story essentially makes incoming damage and enemy aggression (how frequently they will attack) nil, whilst making parry timing as simple as blocking at any point during an enemy’s attack.
Your parry timing must be precise in this mode, and enemy aggression and incoming damage are maxed out, so only tackle this if you’re a hardened melee combat gamer or a Jedi: Fallen Order expert.
